Veggie Pasta


Veggie Pasta Recipe:

  • 1 batch of homemade pasta *

  • 1 cup white onion, diced (about half large onion)

  • 5 cloves garlic minced (about 1 tablespoon)

  • 3 tablespoons olive oil

  • 2 tablespoons butter

  • 1 1/2 - 2 cups asparagus cut into 1” pieces

  • 1 1/2 - 2 cups green beans cut into 1” pieces

  • 1 1/2 - 2 cups snap peas or snow peas cut in half

  • 2 cups cherry tomatoes

  • 1 teaspoon freshly ground pepper

  • 1 teaspoon fresh ground sea salt

  • 1 pinch crushed red pepper flakes

  • 2 tablespoons flour

  • 2 cups chicken stock

  • 2 cups heavy cream

  • 1/2 cup parmesan cheese

  • 2 tablespoons chopped fresh basil

  • 2 cups fresh spinach

  1. Prepare homemade pasta; set aside

  2. Bring a pot of water to a boil for cooking the fresh pasta

  3. Sauté onion and garlic with olive oil in a large pot over medium heat until tender; 4-5 minutes **

  4. Add butter, asparagus, green beans, peas, and tomatoes to the onions/garlic; season with salt, pepper, and crushed red pepper flakes; cook for about 5 minutes, stirring occasionally

  5. Add the flour and stir until the veggies are evenly coated

  6. Slowly add chicken stock and cream; bring to a simmer while stirring occasionally; sauce will begin to thicken

  7. Stir in spinach, parmesan cheese, basil; add additional salt and pepper to taste

  8. Reduce heat to low and let sauce simmer for a few minutes while the noodles cook

  9. Cook fresh pasta in boiling water according to recipe; our cooked pasta into a colander, add strained pasta to the pot with the sauce/veggies; stir to combine (or return strained pasta back to pot used to boil the noodles and then pour veggie sauce over the pasta, stir to combine). You can add additional chicken stock or cream, a small amount at at time, if sauce seems to have thickened too much while pasta cooks

  10. Let pasta and sauce sit for a few minutes to come together before serving

*or use dried fettuccini noodles, but I HIGHLY recommend the homemade pasta

**If you would like meat added to the pasta: chop 2-3 boneless skinless chicken breasts, season with salt/pepper/basil or italian seasoning and cook with the onion and garlic until done before continuing on with adding veggies and the remaining steps
