Arugula Pesto


Arugula Pesto Recipe:

  • 3 cups arugula, packed down tightly

  • 1 1/2 cups basil, packed down tightly

  • 6 cloves garlic

  • 3/4 cup garbanzo beans

  • 1 teaspoon each freshly ground salt and pepper

  • 1/2 cup parmesan cheese

  • 1 teaspoon lemon zest

  • 1 tablespoon lemon juice

  • 1 1/2 cups olive oil

  1. Place all ingredients EXCEPT 1 cup of olive oil into a food processor or blender, begin pulsing to work ingredients together while slowly adding in remaining olive oil

  2. Continue blending until smooth and creamy (more oil can slowly be added if necessary)

  3. Use immediately or refrigerate until ready to use

This pesto is great served on pasta, on sourdough bread, or used as sauce for pizza!
