Pumpkin Snickerdoodle Cookies
I love using my “go-to” recipes (all of the ones I chose to add to my cookbook) and then transform them in different ways to go along with holidays and seasons! For me, fall = pumpkin! I know we have covered this before, I just REALLY do love pumpkin everything; it is soooo warm and cozy and is a great way to usher in the approaching holiday season!
I don’t think a single cookie from the last batch of these Pumpkin Snickerdoodles made it through more than 2 days…….they were all devoured VERY quickly! Cozy on up to the fire and enjoy some cookies!
Pumpkin Snickerdoodle Cookie Recipe:
You will use the Snickerdoodle Cookie Recipe that’s in the Honey, Let’s Make It! Cookbook as the starting point
PLUS you will need these additional ingredients:
1 cup pumpkin puree
1 teaspoon ground ginger
1 teaspoon ground clove
1 teaspoon ground allspice
Beat 1 cup of pumpkin puree with the butter and honey
Continue following recipe as instructed
Replace 1 tablespoons of ground cinnamon with 1 teaspoon each of: ground ginger, clove, and allspice (so 1 tablespoon cinnamon, 1 teaspoon ginger, 1 teaspoon, clove, 1 teaspoon allspice)
Continue coating cookies and baking as directed
