Lamb Skewers
Confession…..I WOULD NOT eat lamb in any way, shape, or form until recently. Even after raising them for YEARS, I was dead set that I didn’t like it and couldn’t eat it. My kids on the other hand, they have absolutely LOVED lamb and I am happy to report that I have joined them in that department!!
My son poured his heart and soul into raising two lambs for the county fair, one to sell at the livestock auction and the second to put meat into our freezer and I can say hands down, it’s the BEST meat I have EVER eaten!
If you haven’t tried lamb, give it a try; I’m sure you will be pleasantly surprised!
These lamb skewers go amazingly with the Orzo Pasta Salad recipe I shared previously!
Lamb Skewers Recipe:
1 pound ground lamb
1/4 cup finely diced onion
2 cloves garlic, minced
2 teaspoons fresh dill, chopped
3 teaspoons Trader Joe’s Za’atar seasoning blend
1/2 teaspoon salt
1/2 teaspoon pepper
Combine all ingredients in a large bowl and mix just until combined
Divide meat into 8 even pieces and wrap each piece onto kebab sticks/skewers * you could also leave them as “meatballs” to cook instead of putting them on skewers (if you are using wooden skewers soak them in water for 20-30 minutes first to prevent burning when cooking)
Refrigerate for 1-2 hours
Heat Traeger or BBQ to 375*
Once hot, place skewers on grill and cook for about 3-4 minutes on each side
Remove from grill
Serve on naan bread topped with feta or goat cheese, thinly sliced red onion, chopped green onions, thinly sliced radishes, thinly sliced cucumber, and *yogurt sauce.
*For the yogurt sauce I just mixed about 1/2 cup plain Greek yogurt with 1-2 tablespoons honey, chopped fresh dill, diced cucumber, a little fresh squeezed lemon juice, and salt/pepper
