Mint Chocolate Chunk Cookies


Christmas cookie baking is always such a special time; from traditional family favorites to new additions, there’s never a shortage of delicious treats around the holidays!

Back when we were still on the “sugar train” my husband’s FAVORITE Christmas cookie I made each year was a chocolate cookie with Andes mint chunks and more of the chocolate mint chunks sprinkled on top……so when we cut all processed sugar he definitely missed those beloved cookies. However, what we call the “new and improved version” has most definitely done the trick; thanks to my Chocolate Chunk Cookie recipe, cacao powder, and a little Young Living Peppermint Vitality Essential Oil!!! There are just a few adaptations from the Chocolate Chunk Cookies on page 29 from my cookbook: Honey, Let’s Make It! I love using those recipes as a jumping point for soooo many variations and new ideas and I am so excited to now be able to share them along the way!

Mint Chocolate Chunk Cookie:

Prepare Chocolate Chunk Cookies as the recipe from the cookbook instructs (page 29) EXCEPT:

  1. replace ~ 1/3 to 1/2 cup of the flour called for in the recipe with unsweetened cacao/cocoa powder

  2. Stir 4 to 6 drops of Young Living Peppermint Vitality Essential Oil into the melted chocolate at the end of making the Chocolate Chunks, before pouring onto parchment paper and placing into freezer

  3. reserve 1 cup of the chocolate chunks to sprinkle on top of cookies immediately after removing baked cookies from oven

Follow recipe’s baking temperature and time

*I know this will be asked…yes, I’m sure you could use peppermint extract; however, that is not something I personally use so you will need to test amounts to add

Also, Young Living’s vitality essential oils are labeled for and safe for ingesting; but not all oils are created equally. PLEASE do not use a random grocery store shelf essential oil that you aren’t 100% able to trust and verify the safety.
